Do you ever have days when things just seem to click! You feel pretty effortless in sticking to your plan? Today was one of those days for me, I’m sitting here tonight writing this post reflecting on the day and how I felt, and I feel at peace with every aspect of the day (that’s not to say it wasn’t busy, but it was a manageable day for me)
Day 4 was No Carb, High Fat eating day. I woke up early this morning and had plenty of time before work, so I actually cooked up some Garlic Oven Chicken so when I got home tonight I had something already prepared to eat. I made my lunch for today and tomorrow and I still had time to cook a protein packed breakfast for myself
Breakfast today was 3 eggs + 1 egg white scrambled, 2 pcs of bacon (fatty part removed) and 1 cup of sauteed spinach.
This protein filled breakfast kept me going for jsut about 4 hours this morning and then I started getting hungry so I grabbed a handful of raw mixed nuts for snack.
A few hours later, around 1pm it was time for my lunch – sorry, kind of boring here, but it was a salad again, although I added some shredded turkey, walnuts and just a couple of cranberries (still kept it low on the carb) to my mix of spinach, cucumber, red pepper, edamame, romaine and tomato. The picture to the left is the bowl I made this morning (yes Im a nerd and weigh everything) this is 2 servings lunch today and tomorrow.
My snack was my standard, unsweetened almond milk, 1 tsp unsweetened cocoa powder mixed with a scoop of whey protein. Today, I knew that wasnt going to be enough to get me through a 60 minute strength workout and 2 mile run intervals so I also ate 1/2 of a whey protein bar (no soy, no sugar). Im glad I went ahead and ate the extra 100 calories, I kicked butt tonight at the gym and I needed the fuel to get me through.
Dinner was exceptionally good tonight! I spread a container of Trader Joes Veggie Chop out on the roasting pan I used to cook my chicken on, and roasted that on 405 degrees for about 20 minutes along with 1 cup of spaghetti squash that I had roasted over the weekend and needed to use up. I turned it a couple of times during the 20 minutes to get it coated from the seasoned pan. After 20 minutes, I added 4 oz of shredded chicken from the Garlic Oven Chicken I had made this morning and let that roast for another 5 minutes. Pulled it out of the oven, added a little cracked pepper and devoured (no really I devoured it – so good)
Dinner had a few more carbs than I think the meal plan intended, but 100% of the carbs came from veggies and after my workout I thought it was a good choice to fuel my body and keep me from waking up starving in the morning.
Kind of a simple recap, but I love that about today, nothing out of the ordinary, I kept my head in the game, eye on the prize as Alicia likes to say and got through another day of CLEAN EATING!
