Hopefully no ones takes me lack of posting yesterday as an indication of not staying on plan! Its been a busy weekend (all good and fun) but last night I just didnt have it in me to sit and write so I thought I would combine Day 6 & 7 for a weekend update.
Day 6 was a High Carb, Moderate Fat day. As I mentioned in Day 3 I love oatmeal, so I was excited yesterday morning for breakfast.
Breakfast was oatmeal mixed with egg whites, topped with blueberries and sliced almonds. I enjoyed with a cup of coffee with a little coconut oil mixed in! This is seriously one of my favorite breakfasts and it keeps me satisfied for hours!
Yesterday was a bit of mind bender for me with my planned workout. I had an hour of strength training planned in the morning with my trainer followed by a 7 mile training run. It was one of those mornings where I just could not get it together, I was a nervous wreck at the thought of working out and then running 7 miles. My mind made every excuse in the book as to why there was no way I was going to make my run. I had convinced myself so much that I brought my iPad into the gym with me thinking I would just run on the treadmill!
After an hour of training with Ben (amazing trainer, motivator, athlete, and runner) I didn’t have any “I cant” excuses left in me. I walked out of the gym ready to head to the beach for a run. Rather than tackling 7 miles, I set my GPS for 79 minutes. I figured that was less than 40 minutes out, turn around and come back.

This is the view that I ran to yesterday, am I nuts, how could I not want to run to this view? Other people were facing blizzard conditions and I was listening to the crashing waves, and enjoying the sunshine on my face. I ran for 81 minutes and finished 7.25 miles…Who Hoo! My pace was slower than normal, but that’s to be expected as I add miles to my training runs.
Bob Harper (yes from the Biggest Loser) has this great quote that I love and yesterday it was on replay in my mind – “Believe in yourself, trust the process, change forever” It sounds so easy doesn’t it? I felt great after my run, I came home and made my self a protein shake with some Zico Chocolate Coconut water, iced coffee and chocolate protein powder – it was really refreshing and totally what my body needed after a long run.
I spent most of the rest of the day reading and doing chores around the house, about 3pm I decided to treat myself to a massage – Holy Cow I needed that – I came home made myself low carb tacos (yes that’s the 2nd time this week) and chilled the rest of the night.
This morning I woke up and was planning to meet a friend for a hike so I didnt have a lot of time to eat breakfast. Day 7 is Low Carb Moderate Fat so for Breakfast I threw some left over roasted veggies in a pan and scrambled 1 egg + 2 egg whites and added 1/4 of a stuffed red pepper from Trader Joes to the mix. It turned out really good (the picture didnt look so good, but trust me it was fantastic)
These were the views from this mornings hike! It was chilly but so beautiful out. We only hiked about 3 1/2 miles this morning, enough to keep me active and to work up a sweat but not enough to make me feel like I had overdone it!
I was hungry when I got home from our hike, so I made a snack of 4 strawberries sliced, with about 9 walnuts & pecans.
I’ve been dying to make a Lemon Buttermilk Pound Cake for the blog, and the weather was perfect for baking today. Boy do I wish I could have a slice of cake – it smells, and looks divine, however its all wrapped up awaiting its new owners tomorrow morning. I’m pretty certain its going to be righteous, it will just have to be righteous for me another time. I feel in a groove right now and I’m not willing to mess that up for cake (I cant believe those words just came out of my mouth).
Sorry to disappoint, but dinner is the same as Friday & Saturday night…yes, you guessed it Low Carb Tacos! What can I say they are good, they satisfy me and lets face it I eat my fair share of salads during the week!
The weekend had all the components that make me happy in them, friends, fitness, relaxation, and baking! Ok, wine might be missing, but we will overlook that one for now.

I’ve been craving oatmeal, but don’t really know how to make it from regular oats. How do you do it?
I use 1/2 cup Old Fashioned Quick oats, 1 cup water, 3 tbs egg whites and cook in microwave for about 3 minutes. Get creative, add cinnamon, vanilla, maple syrup, brown sugar, coconut oil. After it cooks, I usually add fruit and some nuts for staying power. Lately Ive been adding shredded coconut as well.
