I get asked my a lot of my friends what I eat for breakfast. Oatmeal and protein shakes/smoothies are my go to breakfast meals.  They are quick, easy, healthy and satisfy me through my busy mornings.

Ive been playing with different preparations of Oatmeal and Im loving this version.  Hope you do as well. I soak my oats for 15-20 minutes on the sink before I cook them, but that is totally optional, if you dont have the extra time, just skip that step in the directions.

Strawberry Coconut OatmealSince Im still learning what to do with pictures in my posts (I swear that is harder than actually making the recipes for me). I’ve listed everything below

Ingredients:

1/2 cup oatmeal (I use Trader Joes Quick Oats they are Gluten Free and awesome)

1 cup water

dash cinnamon

3 tbls egg whites

1/2 – 1 tsp coconut oil

4-5 strawberries chopped

1 tbls toasted coconut (if you have a Trader Joes get Coconut Chips they will seriously rock your world)

Almond milk (optional)

Directions:

Put the oatmeal and water in a bowl and let sit on counter for 15-20 minutes.  Add cinnamon and egg whites to bowl after it has soaked stir and microwave 1-2 minutes. Stir and add coconut oil and microwave 1 additional minute.  Stir, add splash of almond milk (any milk will do or if its too dry and you dont want to add milk add 1/2-1tbls of water) top with strawberries & coconut and ENJOY!

This meal will hold you over to lunch and get you through a morning workout no problem!  Stay tuned for my tropical version wit mango, coconut milk and coconut tomorrow!
